Hearty Fried Rice Recipe
A flavourful and colourful fried rice recipe to add to your "Eat your rainbow" one-dish meals!
Ingredients
- 1 small white onion, finely chopped
- 1 small carrot, finely chopped
- Broccoli, purple cabbage, bell pepper or any vegetables you prefer, about 1 cup
- 2 eggs, beaten
- Salmon, cut into cubes
- ¼ tsp salt to taste
- 1 tbsp minced ginger
- 2 cloves garlic, minced
- Pinch of red pepper flakes
- 2~3 pouch of Xndo Zero Rice
- 2 green onions, chopped
- 1 tbsp fish sauce
- 1 tsp sesame oil
Directions
- Heat up a pan, add oil and swirl to coat the bottom. Add the beaten eggs and swirl to cook until they are just lightly set, stirring and breaking up along the way. Transfer the eggs to a bowl.
- Return the pan to heat and add 1 tbsp of oil. Shallow fry the salmon cubes and set aside.
- Return the pan again, add onion and carrots stirring until the onions are translucent and the carrots are tender.
- Add the balance veggies and salt. Continue stirring occasionally until the veggies are cooked through and transfer them to the bowl with the eggs.
- Return the pan to heat, and add the ginger, garlic and red pepper flakes, and cook until fragrant.
- Add the Xndo Zero rice, and mix it all together, drizzle fish sauce around the pan, cook and stir occasionally.
- Add salmon, cooked veggies and eggs and stir to combine, and lastly add in the green onion.
- Remove the pan from the heat and drizzle sesame oil. Serve warm.
